It seems you passed the co-founding stage already based on what you just described. Even you offer someone % ownership, they are not necessary co-founders.
What's really matter is who is on your corp. legal doc who own a major stake of your firm which in term own all the IP and other assets.
I'm also surprised at the question you asked...Co-founder or Employee does not really matter, what matter is what you want to achieve as the sole founder for your company. Once you decide on that, you can recruit the right people to join.
If you plan to start the VC series of funding, you need to focus on build a leadership team and set up an advisory board with sr. people who have connections and exp. to take you to the VC round.
If you are still in "Valley of death" stage, you need to come up or refine your biz plan, and decide on how you go about taking your biz to the next level:(establish revenue stream/customer ba<x>se ? generate positive cash flow ? complete product development ?), then you can decide what kind of people you need to bring on board.
